This is a very unique wildflower honey to us this year. Each harvest is unique and complex, and this year we have a flavor profile we’ve never had before at this particular apiary. We believe the previous years of low rainfall brought about new forage in the rains. The flavor was surprising and delicious and reminded us immediately of apple pie, with notes of cinnamon and apples. We’ve hoarded quite a bit of this for ourselves, because we are doubtful we’ll be able to get our bees to replicate this mix of nectars.
