Forest Honey is known to be one of the most unique honeys in the world. Forest Honey is not made from blossom nectar, but from the sweet sappy dew excreted by plant sucking insects such as aphids. These bugs eat the sap produced by trees and then excrete a sweet goo that the bees then feed on to develop this exotic honey. This very limited harvest honey is dark in color and is highly desired for its resinous and medicinal notes of the forest. This is a sweet, dark, and a very complex honey. Our kids call this aphid poop honey.
