This is a charcuterie boards best friend. We took our delicious sage honey and did a controlled cold smoke over hours on ice. This honey was not heated in order to retain the healthy benefits of raw honey. The gentle wood smoke imparts a whole new flavor in the honey. This is our hardest (labor of love) process. It has been referred to as bacon honey, because of the chewy smokey flavor. A chef and foodie favorite. Very limited supply.
